I'd suggest cooking lots of things on Saturday. Burgers, shiskabobs, grilled chicken breasts, those country ribs' from Walmart. They keep in the fridge or freezer (of course, I don't know how much space yours has). Then you only have to make a side of veggies and a starch (microwave works great for this).
Also, get a thermal cooker. Set up the meal before you leave, so its done when you get home. 15-30 minutes prep time. You should be able to cook stew, soup, lamb shanks, pot roast, most anything you can cook in a crock pot or slow cooker.
Best of all, since this uses no electricty or gas after the inital preparation, you can begin the meal, set the thermal cooker in the sink and drive on down the road. When you get to where you're going, the meal will be ready.
